I think it would not be a bad idea having heroes who can hit almost everywhere and exploit the weak points (heart)
At last manage to kill it with vestal, plague doctor, highwayman, hellion. Manage to outdamage it although it took my hellion, turns out understanding attack patterns of each body parts help with healing priority, the butt only attack back row, head only front row, spine attack all row i think but weaker. Knowing which one to get heal is helpful.
If you're having lots of issues with the raw damage of "Maws of Life" Try use a crusader with "Bulwark of Faith" and a maa who can spam "Defender" in the front two ranks. Their large prot buffs (40% and above) will negate the damage from the giant heads. Then you can use a HM or jester to spam DoT on the flesh.
I'd suggest something like:
1st rank: Crusader - use bulwark to buff prot, then use battle heal and/or use smite
2nd rank: Maa - use defender every other turn on one either the 3rd or 4th rank hero
3rd rank: Jester or HM - spam DoT (bonus to HM for being able to heal himself)
4th rank: Vestal - Always a safe choice
