1: Ignore the cauldron.
2: preferably have a Vestal present to cast the party heal spell frequently.
3: Take multiple party members who can all hit the back ranks from any position in the party. Basically the Crusader & Leper won't be much help in this fight and the Hellion can't do much unless she's in the front rank and has the Iron Swan skill. You want people who can hit the back. The Bounty Hunter, Houndmaster & Arbalest are all quite helpful in this encounter. While he can't pull her the Occultist can make a few back rank tentacle attacks as well.
Personally I just took a Hellion, setup camp at some point beforehand and buffed the hell out of her (Battle Trance in particular is pretty great), walked in and ruined the Hags entire family tree with Iron Swan to the face.
Seriously. It's that good. The fight was over by round two.
Most bosses get multiple turns. Look at your heroes' health bar and the enemies you face, see the little white stripe next to them? They're turn indicators. If it's gone, it means that that hero/enemy has done their turn for the round.
Bosses have two or three of those per round (maybe even four later on, I can't recall) meaning that they can do multiple turns per round. Stunning a boss will take one turn off of them for that round.
Both times that I've beaten the hag so far (Apprentice and Veteran versions), I had a Leper at the front. He might not be able to reach her, but he can topple over a pot in 1 or 2 hits if I urgently need to free a party member. Though I think a Crusader would be even better there, since a Crusader can do Holy Lance to strike the hag from position 2, and can also have a healing skill to be the party's additional healer in case the Vestal is busy or in the pot.
And then your buffed up Hellion is the first one that she puts in the pot. That messed up my strategy once and led to a complete wipe, haha. It's a risky play but man can it pay off.
Anyway, in addition to the helpful helpfulness people already mentioned, I think blight/bleed attacks are also very useful against the hag since she has low resistance to both (iirc) and she moves twice per turn. So Plague's blight does 8 damage per turn 'stead of 4. It adds up real fast. This is also a boss where the Jester is really good due to him being able to work very well with shuffled teams, as well as having a strong bleed attack.
Front, bring a leper and a crusader. Have holy lance on crusader, keep Leper in front spot with Life Crystal + Bloodthirst ring (or any HP up items).
Let the Leper fall in. Nuke down the hag.
