What kind of dog breed is the houndmaster's pup?
Is it based on a real life breed? Or is something that the art team invented?

Yeah. It's an irish setter I believe. Friend of mine looked it up.

Edit: Irish wolfhound

Yeah they're one of the largest breeds of dog. Sadly they tend to have the shortest expected lifespan too :(

Though with what the Houndmaster puts his doggy through, I'm not surprised!

Thanks! Now the thing that have to do is find one, and my career of dungeon crawling can begin!

Irish Wolfhounds are not named because they are part wolf, they were so named because the original breed was for killing them. Modern versions are more cuddly and allegedly smaller than the ones in antiquity (Depending on how much you trust roman accounts as to their size and ferocity). At any rate, they bond very tightly with their owners and their family, and they are very well behaved, especially for being such an enormous dog. So really, he couldn't have picked a better animal.
