12 Torches
is my setup.
I always buy all the food, except maybe for Weald/Warrens where you can get free food stacks off Curios.
2~3 Shovels too.
For other supplies, It drastically varies depending on the area.
I always bring skeleton keys and keep at least one until I have either looted an secret room or have confirmed there is none or it becomes to risky to keep searching.
In the Cove, I bring a full stack of medical herbs. The traps are nasty and medical herbs can remove the debuffs. Also, a certain curio will get rid of one random negative quirk, including locked ones. Thats a lot of gold and time saved in my opinion(Check the wikia for details if you want to know more).
My last two runs(both cove) were ridiculous, I found 7 cove specific curios and one common curio and managed to rid my heroes of 8 negative quirks that way.( I keep waiting for the horrible trap the RNG is setting me up for.)
1. If you have no in-fight healers, bring extra food to compensate. Bring even more if your team has limited to no healing camping skills, as you will be relying heavily on camping feasts and post-battle snacks for healing (it may pay to purchase skills from the Survilalist Instructor).
Just make sure you always have at least a little food in case you hit a hunger check. It's entirely possible for your heroes to go hungry right after a feast.
2. Different areas have different curios and status effects. I won't give you a full run-down, but in regards to food, you generally want to pack extra for the Ruins, while the Warrens have a lot of curios that grant large amounts of food with the right items (Weald and Cove are in between). I would also recommend bringing at least two shovels just in case (they can also be used on certain curios for loot!). For torches I would bring 10-12 for medium quests, maybe more if you're relying on light-dependant quirks or trinkets.
3. Item are expensive and take up space for loot. You don't want to leave your heroes exposed to status effects or hunger, but patching up every hero with a paper cut is expensive. Personally I usually lean on the cautious side since preperation is expensive anyway so what's another thousand or so gold, but it's up to you to decide how much you want to prepare for fringe events.
Short: 8 torches, 8 food, 2 shovels
Short treasure run: 8 food, 2 shovels
Medium: 14 torches, 16-20 food, 3 shovels
Long: Max food, 16 torches, 4 shovels
These numbers pretty much ensure you party will not have supply issues. It may not be numerically optimal, but it's a safe option without going overboard. Shovels and food are the most important since not having an adequate amount will demolish your party. Torches are optional in many cases unless you are going Champion where you should really bring them usually.
You can add in a smattering of other supplies depending on the difficulty of the dungeon and what curios you want to use reagants on. Bring more anti-venom to Champion Weald/Warrens and more Bandages to Ruins/Cove.

Then...
For the Ruins add 2 holy water (add up to 2 medicinal herbs and 1 anti venom if you really want to).
For the Warrens add 2 medicinal herbs and 1 anti venom.
The the Weald add 1 medicinal herbs and 2 anti venom.
For The Cove add 2 medicinal herbs and either 1 anti venom or 1 holy water. Your choice.
My regional recommendations are based on a short run. For a medium run you might want to add a little bit more of the regioanl favourite supplies.
I bring a vestal so I don't bother with bandages. Just keep your light at max burn torches every time it goes to 75%

I've been told I bring way too much food, but I've also seen many people suggest "just get all the food" so I figure a middle ground is just fine there :)
Its just easier to bury the dead in teh dungeon (also cheaper because the Caretaker isn't funding the Brothel 24/7 doing charity work)
Bring enough food to feast on every campfire + a full stack.
Torches, 1 stack minimum depending on how bright you want to keep it.
I always bring a full stack for medium and longer. You never know how many barricades the game is suddenly going to throw at you, and they're brutal if you don't have a shovel.
Also, keep in mind there are 2 trinkets that reduce food useage (and some that increase it).
I like being safe but not too safe that i'm almost certainly spending too much.
