Where can I see the chosen difficulty level?

what level do you mean? the level of the dungeon you're in or game difficulty such as radiant and blood moon. if it's game difficulty, you can see it in the main menu on the save file. not sure about dungeon difficulty though

The difficulty of the estate is shown on the left of the profile in the main menu and on the top left when you're in the hamlet. Does that answer your question?
