2: Unless your party specifically specializes in Virtue farming, I would not taunt the odds.
3-4: Depends, really. Too many affecting factors.
5: If things go south, just leave indeed. Unless obviously you do not much care about that particular set of Heroes and want that reward badly.
But the true answer is to simply bring a jester. You can do pitch-black long runs without even using a single campfire if you manage your stress well enough.
Just keep in mind this no guarantee your party members won't go nuts, but if you end up with even one virtuous hero instead of an afflicted one due to taking these items along then I think they have more than paid for the item slots. I would not purposely try to drive your hero that is wearing these things crazy, but use it instead as an insurance policy and last ditch safety net since it is so very dangerous and detrimental to have afflicted characters on your team. Once one goes they usually try to take the rest with them.
You can actually build a party around these trinkets where you purposely allow stress to rise under controlled conditions and then go for the virtue roll and if failed then use absolutely massive stress healing to bring the character back down to zero during the dungeon and try again. This is a very tricky strategy and would require a radically different party build than what you are using since instead of running no stress healers you must run a bare minimum of two, preferably more.
I think in your case just bringing these two items along as an insurance policy might be worth a try. At the very worst it cost you two trinket slots which really isn't a very high opportunity cost considering what is at stake. The reason most people don't use these trinkets is because they run stress healing and aren't getting afflicted heroes often enough to be worth it. In your case where this is happening in pretty much every dungeon, I think it is worth the gamble.
