It's also worth pointing out that your settings for Campaign and Multiplayer are stored in different files, so you need to set things for both of them.
To set a custom resolution you need to enter the following commands in sequence from console (~):
r_customheight "1080"
r_customwidth "1920"
r_mode "-1"
vid_restart
I also recommend grabbing Q3E minimizer for CoD1 and 2. It has a better method for handling resolution mismatches with modern Windows. (ignore what game this is listed for, CoD is also built on Quake 3 Engine):

1. Find the config.cfg file within Steam\steamapps\common\Call of Duty\Main
2. Open it on notepad and make the following changes:
seta cg_fov "xxx" - Change xxx to 90 for 16:10 and 95 for 16:9 resolutions
seta r_customheight "xxx" - Change xxx to the desired resolution
seta r_customwidth "xxx" - Change xxx to the desired resolution
seta r_mode "xxx" - Change xxx to -1
If you want to make the same changes to the multiplayer mode, look for the config_mp.cfg file in the same directory and make the same changes.
This worked great for me, now playing at 2560x1440. I'd also suggest turning on all the driver features (on Nvidia, I forced FXAA, transparency AA, 16x Anisotropic filter, etc. and it looks a lot better).
