i am seeking a choice target to start my bid for the crown, of the factions, which ones are easiest to conquer. i am looking at troop strength, location, and how easy to defend the land incase all the other factions try to jump in

A lot of people have the Sturgians die in their games, so they might be a good choice to purge. They're on the Northern edge of the map, and their troop lineup isn't in a good spot right now, making them weak compared to most other factions. One of their cities to the very north-west of their starting territory is sorta isolated on it's own bit of land, with the only way to reach it being a narrow, often bandit-infested valley. Might be a good place to start.
battania. rare archer, no horse archer, weak cavalry, means easier to beat in battles. their highland also easier to defend as the route contains many choke point to enter the kingdom and you can work up your way to the west to conquer vlandians.

Sturgia and battania. Both lack cav, both lack archers (even though one has best in game).

I chose to start my own Kingdom to the far east of the map. Close to Sturgia.

There is a lone castle named Dinar at the edge of the map. It belongs to Khuzait.

I executed most of the Khuzait leaders to weaken them before I took the castle. Then grew from there. 800 days later, nobody has attacked that castle.

Problem is, I executed too many Khuzait leaders and their Kingdom vanished from the map. They were gobbled up by everyone else, not just me. I tipped the scales too much.

i have been eyeing battania in particular, but i did not want to foolishly commit on them until i knew they are easy becuase thier troops suck, auto calc battles has never been fairly done in any game i have seen, unless you have overwhelming power and numbers. the battanians look juicy becuase they seem constantly harried by the empire and vlandians so they seeem to be struggling with maintaining numbers and have the fewest starting fiefs, which may compound their situation.

i do have a side question: if battania should i attack vlandia or sturgia next?

I'd go after Vlandia. Attacking Sturgia still leaves you open to multiple sides, whereas taking out Vlandia secures a flank, and establishes a safe, secure region.

one of the things i miss from the original MB is the notables menu where you can keep track of lords and which kingdoms are warring each other, I normally plan my attack on which side has their army away but this game is a bit harder to track things down

Press N, look at Kingdoms. You'll be able to see what clans are in it, what wars they are engaged in, etc.

didn't they have the same in the encyclopedia (N key)?

I think your faction is one most easy to picking, as often your faction don't had any town/village/castle in start of game.

I'd say encyclopedia does a fairly decent job. Actually the same job.
