my tip would be just to ride around picking up cheap horses at horse villages.
I typically buy them in Khuzait/Aeseri land and sell some in Vlandia (if trading).
But yeah any horses are good, and frankly they are cheap if you have an economy behind it.
I feel it should be higher cost, but they get their own horse. At least that way they will all have the same horse stats.

I just keep the lame horses that I capture and use them for upgrading :P
Thats what I have been doing keeping horses and hoping the stats from the horse didnt make a crappy unit.

Otherwise, store your important horses in a city you own until you can use them.
This mod caused my game to crash when upgrading cavalry units, so I'd be careful about this.
That does work, and the button he speaks of is the LOCK, however ....
As long as you have "cheap" horses UNLOCKED, it won't use the LOCKED horses, and as soon as the UNLOCKED horses runs out, the game will then use the LOCKED horses.
The problem is clear, the mechanic shouldn't use locked horses. I just tested this using cheap lame war horses and locked the expensive ones ... It used the lame horses which is cool but frankly that is lame ... :P

Is there an exception for the named mounts? I had 2 of the named horses and the named camel and my troops never touched them.
Nope. It's the 'category' of horse that matters. So a 'horse' is required at lower tiers, and a 'Warhorse' is needed for higher tier, ect. The stat difference between mounts in the same category have no difference to upgraded units. (ie, a Steppe horse is the same as a desert horse when upgrading -- so cheaper is better).
Like someone said above, I usually stock up on steppe horses pretty early, can pick them up between 50-100 denars each in some khuzait areas.
