Turns out you CAN age children up, and inheritance works

So I've had children age "naturally" to age 6 in game time, but their portrait never actually appeared in my town and they could not be interacted with.

So:

-- Using the console, set their age to 18. The portrait will then appear, but it will be a child's portrait/body.

-- To fix this, you'll have to install the Detailed character creator/editor found here https://www.nexusmods.com/mountandblade2bannerlord/mods/118.

(The mod simply re-enables various body sliders that the devs have hidden.)
Anyway, once your child has an actual portrait and can be spoken to:

-- Go to the encyclopedia (your child's page) and click "edit character". You can now move the age slider to make them an adult/playable.

I also used the console to make my starting character sick/die, which worked, and I was able to replace him with one of the kids.

I'm sure people have already figured this out, but hopefully this helps someone who doesn't want to wait 18 in-game years for an heir

DCC Works fine asides from the fact i have to take my children prisoner and then ransom them before they show up on the map.
