The only way to keep all of your gold in Endless Mode is to end the game via menus. If you die in Endless Mode, while having no skull coins to respawn, you won't be able to pick the very last pile of gold that you lost.
50% loss is pretty high. I think it's likely that you died a multiple times at the end of your game, dropping many gold piles. In the chaos, you probably didn't notice the piles or try to pick them up. 20% is normal if you manage to pick up all of your gold after each death before getting the game over.
The last room was very chaotic. I had 4 summoning stones up, and I could hardly move around in the room, so it's very likely I missed 2 piles of gold before the last one that killed me as well.
Thank you for clarifying that.
Normally I do get the piles I drop on death, but this was a particularly busy room, so I was just trying to get to a more empty area of it, which shifted between each death.
