If I capture the Capital of a Nation, Does the entire nation fall?

Yes, any nation that has already annexed another is part of that nation. If Nation A annexes Nation B, Nation B does not exist. If you later conquer Nation A, you will also take the land of Nation B. You can go under the politics tab and revive Nation B if you please.

If you capture a nations capital, they do not always surrender. However, you will get there supply stockpile. Nations surrender when you occuply a certain number of there VC's(to see the surrender progress, go to deplomicy). However, since capitals are worth alot of points, the nations will offten surrender if you get the capital.

larger countrys like russia can last some time after u take the capt.

It really depends on the country. All the "interesting powers" (USA, UK, USSR, France, Italy, Germany, and Japan) take a bit of invading to crumble. Countries like China and Poland also take a bit to subdue.

For example, I played as the US and made a full out invasion into both Tokyo and Kyoto. I eventually occupied the entire homeland but they still did not surrender. They were the Japanese, so it was expected, but game mechanics wise they didn't surrender because they still owned all those Korean cities.

Generally, countries with a lot of cities will not fall after losing their capital.
