Well, if you have a zero upgrade town then it looks all made of wood and such, as you get more buildings and upgrades, your town starts to look more stone and eventually the houses get bricks as roof as you have maxed the town.
Same goes for town menu; low level towns are brown and eventually they turn gray and finally gray and red. Size also changes
I think the population growth is based on town level, if you have a high level town it has more population slots (that can be used for recruiting). I have made high level towns with a shi-tty amount of food, but they seem to grow just as fast.
