The reason for inverting Y-axis is because players are divided in what they like. Just like there are left handed and right handed people, there are "inverted Y-axis" and "normal Y-axis"-people.
This option makes both able to play.
However, I don't think many people play with inverted horizontal axis. It would not make sense for many to invert this.
So the simple answer to your question is: Hardly anyone ever needed to invert the X-axis. So it's not common to add this option into games.
Why do you need it?
If you really want it, you might be able to configure your controller/mouse in a different way. But that all depends on your hardware.
There is a demand out there. For instance: https://www.reddit.com/r/pcgaming/comments/2k9jys/for_those_give_me_inverted_or_give_me_death_pc/
I want it because Dark Cloud 2 used an "inverted" camera and it was the first game I played of this type. I'm trying Durazno but I haven't got it working yet.
Uninstall.
Vonotar, same here. I'm Dark Souls player.
BTW. I will never buy this game until implementation of X-axis patch.
Did but... how to push the buttons now
