So, what enemies can you ride with the Rodeo skill?
The description of that S.A.M. is pretty vague: "Ride enemies such as Khnum and Werebulls", but I was also able to control blue Bio-Mechanoids.
What is a full list of enemies you can take over?

i know you can also ride belchers and zealots. fairly sure major biomechs, reptiloids, adult arachnoids, and scrapjacks are also rideable. maybe pyromaniacs

Wow that's a much longer list than I thought!

I only rode a werebull a few times and while ridiculous and fun I didn't think it was particularly effective.
Also wanted to try Khnum but never figured out how to climb it. Should it be stunned?

Yes a lot of the enemies need to be stunned to manage to ride them.

Is there any point though? Aside from a bit of fun. Like are any of them effective combat tools?

TBH I find the whole melee skill tree a bit of a novelty rather than useful skills

Agreed. No reason to pick any skills on the right than the skills on the left atm.

Dual wielding everything vs. melee weapon

Hoping it would be possible to mod skills trees. Would open up a huge amount of possibility.

While true that the perks on the left side are considered a bit more powerful and useful the ones on the right side can also be super effective.
While riding an enemy Sam doesn't take the damage but the enemy does and you get to use the enemy's ability which is super helpful in most case.
Melee is more helpful on hard+ difficulties with the slow time effect that it provides and the health pickup.
Also don't forget you can switch perks at any point in the game, so feel free to use whatever you like and have fun with at any time!

I've experimented with melee a bit and while the time slowdown is a cool effect, projectiles are still coming at you and you'll get hit with whatever is paused near you

As someone who finished the game on both Hard and Serious I gotta say - melee takedowns are still pretty underwhelming. You get very little health back form kills; while you are in an animation the projectiles dont stop; it also doesnt work well in MP, since enemies dont stop coming.

ok,so it does not work like Eternal´s glory kills,good to know.

the only big difference i've noticed is that there's no knockback/stun on enemies around the takedown
