It's a good idea to make sure, at the very least, your Cleric/Druid is protected from energy drain whenever you fight enemies with the ability.
Minsc with a Mace of disruption +5 and dunno chaotic commands should be able to reek havoc against level draining enemies.
If you can negate the attack (e.g. Protection from Magical Weapons), that should stop the on hit effect from being applied, but Stoneskin or Mirror Image will still let on hit effects get through.
IIRC you can't cheese so much in BG2EE with Improved Haste -> Shapeshift (Mind Flayer) -> Timestop guaranteed hits like you could in vanilla. IIRC you could cheese the "Oneshot Assassin" in vanilla, but in EE you can't.
Outside of that, some items and spells have been known to protect against energy drain. Or you can make an Undead Slayer (Paladin kit) who are flat out immune to Level Drain.
but yeah lesser restoration cast from your priest is best, or using a temple in the worst case scenario.
temple costs money.
I can't recall if its cheaper to kill off party members who get level drained and ressurect them at a temple instead.
