sorry i can't help, only tell you that it doesn't matter for game mechanics, it's only the looks. greenhouses, cottonfields orchards and potatofields all produce "crops"... the game doesn't differentiate, all of them are crops and all crops can be fed to animals and turned into "animal products" and all crops can be ground to flour.
Each time you choose crop in industries Farm tools you’re building what ever you built last.
Exit tools then in game left click on greenhouse and in popup where it says greenhouse change it to whatever crop you want to build and then return to Farm tools to build.

I like winter/Snowfall maps a lot and thought my game had problems in the past, until this dawned on me.
Winter is coming .. 👀
This is correct, for winter maps all you get is the greenhouse.
BTW, on the regular maps, if placing a crop or orchard on hilly ground, the fields and orchards will follow the terrain but the greenhouses will distort the terrain leaving sunken or raised land around the greenhouse.
