in this mod I found a single option that supposedly solved this, but it doesn't work.

with move it you highlight all nodes that are part of the slope and then hit Ctrl+S, or the slope smoother button. (you highlight multiple nodes by shift-clicking them or by switching to marquee selection and clik-drawing a rectangle around them.)
topmost and lowest node will stay in place all other nodes will be evenly distributed along the height difference.
the move it method has its limits:
*) it is only looking at nodes and not segmet lenght... if you have variable segment lenghts the slope will look wonky, it works best with equal lenght segments.
*) it can't handle roads circling back on themselfs, you can't do spirals with it.
the other 2 mods I mentioned calculate the incline% needed from lowest to highest node and then make each segment exactly that incline% ... they handle different segmet lenghts well and can do spirals.
I agree with other posters, Network Multitool is a great mod and it's slope tool is ace.
If you are not averse to new mods try Network Multitool.
Electrix Road tools is a great mod too, before Network Multitool I'd have recomended it but it's obsolete because Network Multitool is a full replacement and can do even more.
If you averse to "yet another new mod" try to get the move it method working.

This works really well when the road has a curve in it. Still, I believe that nodes will always want to be flat, but I cannot prove it other than I had roads do like you have as well and I tend to ignore it.
another thing that might be at work,... apart from the slope is the road a straight line or has it curves?... sometimes if curves don't connect at 180° the game will interpret them as junctions and all junctions are flat... causing the tableing at nodes.
you can eighter try to straighten the road, set move it to snapping on and move the 2 middle nodes around a tiny bit... or even rebuild it in a straight line.
or you can use above mentioned node controller mod to set the individual nodes to sloped instead of flat.
