Not enough coal for the power plant
What should I do? I have indunstry around the plant but the plant can't get coal.

Only a specialised industry for ore will be able to provide a homegrown supply of coal. Generic industry will not supply any because i only produces goods for commercial.
Without a homegrown supply of coal, the coal plant will import it fro the outside connection. It requires, therefore a good connection to the highway and no congestion to impede delivery.

There are plenty of alternatives if you do not wish to use fossil fuels. Each of them come with their own quirks.
Wind power = free but susceptible to weather conditions.
Oil power = same as coal. Supply with imports or from your own specialised oil industry.
Hydroelectric power = requires a suitable location for a dam and good engineering skills to build one that works consistently.
Solar power = Susceptible to weather conditions and day/night cycle.
Nuclear power = no downsides but expensive to build.
Geothermal power = requires Snowfall DLC for use on winter maps but can be made available for other biomes with a mod.
Fusion Power plant = no downsides ;)

Depends on how you want to feel about this, but there are mods that will give you "infinite" natural resources. I know that the non-renewable resources are meant to run out as part of the game mechanic/challenge but they run out in an "unrealistic" length of time so it can be argued using the "infinite resources" mod makes the game more realistic if you run your city inside the limitations of a couple hundred years.

Oil and ore industries give 35% and 20% additional tax income compared to normal industries. It is therefore lucrative to exploit these finite natural resources for a boost in tax income until the resources are depleted. This allows you for a greater expenditure within the time frame of oil and ore exploitation.

I've discovered that the solar plant will give continous max power if you turn off the 'day/night cycle' and 'dynamic weather' via the 'Gameplay' settings in the 'Options' menu.

To be honest, I was still expecting to get the power output fluctuations. I only turned them off because I didn't like the visual effects they caused during gameplay. :(

Use unlimited ore/oil mods, paint some ores/oils on your map using landscaping mods, then build industry over it. It should be enough to supply your powerplant.

Otherwise, your powerplant will keep importing ores/oils from outside and add heavy traffic to your roads
