I mean, sure, with Leon it can be a pain in the ass, but with Wesker its a piece of cake.
If you can aim with the bow, beating Mercs with Krauser is even easier.
Ada and Hunk can get into trouble here and there but atleast the village should be doable. Especially with Hunk.
Well I've had super severe trouble with the campaign in every new game, aggresively conserving ammo for the harder bits, often running back to save after knifing a single enemy just to get by from the seemingly infinite amount of impossible scenarios. Imagine my very first run, I thought entering the village for the first time with virtually no bullets was the most absolutely insane thing ever until THE NEXT RUN when I realized there is no need to kill a single enemy.
I just recently finished professional again (because of the HD project release) so I seem to have re-developed some skills handling the mobs. I just unlocked my first character ever in mercs so no, I wouldn't know about krauser or hunk (who?) or others. My weak spot is the special enemies in each level, it's very rare for me to even survive a single match.
My advise (if you want the to do the regular way) play the Waterworld with Ada until you unlock Wesker (His loadout is better, he is tougher, faster, and his melee moves are very powerfull).
With him you should be able to beat all stages by the time. Or...just beat the castle, unlock Krauser and falcon-punch your way through the other stages.
As for Hunk...well, its a guy with a gasmask who works for Umbrella
(originated from Residen Evil 2).
He only has a custom TMP and some grenades which can be very annoying, when you have to face a boss except the bella sisters.
Lots of people like him because his main melee move is a neckbreaker that instantly kills everything except Garrador, J.J. and Super Salvador. Yes, he can insta-kill a Bella Sister if you stun her first. There some nice videos where the player almost dance through entire groups of ganados, killing one after the other. Very effective but...mostly in the village...
He needs 5 stars with all characters on all stages to unlock the hand cannon. It's fairly accessible but with Leon's crappy loadout it can be a pain in the ass in certain stages.
And at that point you now the stages with there bonus times, healing items, ammo boxes and where each boss shows up.

it requires a little effort in order to run properly, but it allows you to do some things in mercs.
Freezing Timer, Combo counter or just set the amount of points you want.
Dunno how good it works since I haven't tested it. Its just the first thing you can find on those modding board. And it looked like something that delivers what you looking for.
somehow I'm having trouble getting past ~22k points in the castle, maybe because I'm trying to stay away from the garrador?
do I have to 4-star a level with hunk to unlock krauser?
If you're talking about the one near where you spawn I'd just kill it. Use the red barrel, throw grenades. You can step backwards if he's coming running towards you, he'll flail around and you can land a hit on the parasite when he swings too far. If he's thrusting towards you with his arm up, get out of his way and he'll (probably) get stuck on a wall, then you shoot him.
The one at the top I'd avoid because of those dammed archers. The other one I never saw (thank god).
Nope, you can unlock every character with any character.
Time shouldn't be a problem since there are only 5 Time extension on that stage and some them will give you 90 secs to your counter. I always found the way more relaxing than the fortress where you lots of extensions but every single one only gives 30 seconds. And since the castle is very linear, its almost impossible to miss one of those time extensions.
Sometimes its just neccessary to rush through the mobs in order to get them. I've always had the feeling, that the amount of enemies in the castle are way higher and the spawntimes are shorter, than on the stages.

But....
the archers dont respawn as fast as the other regular enemies so once you've cleared it, it should be more manageble later on. Flashbangs are your best friends up there. That way you keep moving and spend very little time doing damage via melee attacks.
