You shoot too late then, need to shoot as early as possible.
Have you tried leaving through the door behind you before it hits you? I've never had issues with this part, but it's worth a shot.
You're having framerate atrocity. Anything different than exact 30 fps or exact 60 fps will cause engine atrocities in this game specially on that truck part. RE4's engine logic is still tied to the framerate even in this 2014 version. Other atrocities includes grenades not exploding sometimes, mine chart QTE not working, Ganado projectile weapons twitching and other stuff.
Set your framerate to exact 30 fps and try it. If you can't maintain 30 fps in this game even on the lowest settings and resolution than you might have to upgrade to a decent gaming PC.

^ People who locked their game at 20 fps because their PC couldn't handle 30fps. All stuck in the truck part. RE4's ancient engine at its best with its logic tied to the framerate.
