Really, really simple controls...?
Is there a way to dumb this down to really, just super-duper simple, like Grand Theft Auto level controls, just to get me started?

Well, when you do come back, the drone, the Jetson, and the hot air balloon are there for you: super easy flight controls.
I'm actually not coming back; I ended up just using the proper tools for what I was trying to do, even though it wasn't quite the way I wanted to do it.

Shame, tho; flight sim like this, it ought to have an arcade mode, an, "I just want to fart around in a plane!" mode. Just straight-up speed, landing gear, and which way yer pointed, maybe flaps if they had time, done. Like, as a toggle in the Options menu, have that.

Ah, well. No harm done.
i mean youre asking for something the game already has at some point its not the games fault.

Unless we don't mean the same thing.

I just re-read the thread and don't see that, so maybe be more clear.
Well, yes, the drone. Again. It has simple, realistic flight controls - for a drone. You fly it. It is an aircraft. However, it does not respond to air currents or weather, making it extremely simple to handle. It has a decent camera suite which makes it excellent for reconnaissance. People often use it to look at scenery and fly into buildings that have interiors.

Then there is the Jetson, again. It flies like the drone, but has a human riding it, and the range is limited unless you abuse the recharger, and there is no penalty for that.

And then the hot air balloon, which predates manned winged flight. You go up, it comes down, it really is a lovely experience.

The other aircraft are more complex than a bag of hot air, but they aren't difficult to learn. Many are tricky to master, though. Most people have no problem getting the aircraft up. The blimp, for example, is truly easy to launch. It is so easy to take off with the blimp, that if you aren't careful the blimp will fly up into the clouds while your character is standing on the ground (which doesn't happen in real life if the blimp's failsafe ripcord is attached properly). Unlike the balloon, it pretty much does not come down. However, flying the blimp in such a way that you get to your destination without wild oscillations is tricky.

A controller helps a lot: I bought an XBOX controller from Goodwill for a few bucks. Anything is better than KB/M.

How about trying those quadrocopter hovercraft air taxi thingies under aircraft selection? They are ment to be as simple as cars. No flaps, no ILS, no mixture.
