If you head to General Options then Flight Interface you can change the options for if you'd like to have the Overlay enabled! :)

No options showing or wording for OVERLAY
It depends what you'd like to turn off in those options as to which option you'll need to disable. If you're talking about the brackets as in information as to your speed and altitude on screen then you can disable the "HUD in External View" and "HUD in Cockpit View" options.

I'm refering to the brackets showing the direction you fly.. i.e. external view outside the plane, it shows these... [ ] as a guide of where to have your plane flying from shortly after take off to guiding your approach to landing.. and I don't want to see them
I think he means those blue squares in the sky that guide you during some flights. Pretty sure I saw an option to turn them off somewhere...

Not home so I can't check, but or some reason I think it's under pilot assists, not interface.
I believe there's also a spot in the Control configuration under Assistances to where you can bind a key/button to toggle it on and off during flight.
