I tried to do this with the MS Store 2020 version on PC ... and THAT got really complicated (MS is using symbolic links themselves, but also encrypts UWP files/folders and obfuscates user UAC access.
...all this, to say: you are right!
Neither you, nor anyone else, should be forced to deep dive into making this game run on your PC.
For all the efforts by Microsoft to dumb down the OS user experience, they lost their way a long time ago and are solely to blame for the issues customer have with MSFS 2020 and 2024.
I feel bad for Asebo and the game devs. Not their fault.

before you do, copy the folder from c to d and delete it on c. otherwise it will tell you the folder already exists. after that, you should have a Microsoft Flight Simulator 2024 shortcut to d under your roaming folder
c:\Users\{yourusername}\AppData\Roaming\Microsoft Flight Simulator 2024\
The last line in that file is "InstalledPackagesPath". Change that to whatever folder you want your files to download and make sure that folder exists before launching the game (and if you already downloaded some files you can copy them to avoid re-downloading)
I can't test if this works in MSFS 2024 since I can't get the game to launch because of queue but since the file is the same as in 2020 version it should work...
uhhh no. ♥♥♥♥ off. My steam directory goes directly to my D: but Flight simulator doesn't care.

So it said junction created. I see a little shortcut in there now so I assume it worked?
yes. now all downloads for msfs2024 go to your d drive until you remove that mklink

Perhaps you should read back to where I explicitly tell you I don’t even have enough space on my C: to do the initial download.
You need that and then the automatic download before you even get into the game to ♥♥♥♥ with the cache.
The mlink thing worked for me.
