these times will always be different since it will take time to login to the game itself, let alone the whole discovering the shop and deciding what to buy time is not "time spend ingame"!
in your case steam cant know about your previous activitys and so it cant reward you with an archivement, so you are correct.
currently your steam profile shows 598.2 hours, look into the archivements to see overall and latly played time (your steam profile)
as @Lx188 mentioned, you can see your actual hunting time ingame, on your profile on the launcher.
I guess this perfectly answers my question, I was playing the game for quite a long time before it came to Steam (the launcher was available for download on the publisher homepage back then) I didn't think about simply checking the play time of the game on Steam
didn't think it was such a big difference between total game time and game time on steam though
