I'd say it all depends on how big you want to go and still allow deer for said calibre.
Here's my two cents.
.300, accurate and allow a wide selection of animals permitted. When I started playing this was the workhorse for me. Bolt action without a magazine, so no quick second shot. Few scopes to choose from. 2-10x42, 3-9x40mm and 4x32mm.
6.5x55 Blaser, my personal favorite which I don't use as often as I'd like as it won't go larger than deers. No elk, moose or bear. Comes with magazine so you can get a second shot rather quick. Only one scope 3-9x42mm, also has an aimpoint that can be bought.
7mm Bullpup, Powerful and accurate (from my experience), Allows a wide selection of animals. Comes with magazine and got a wide selection of scopes to pick from. 2-6, 3-9. 12x50 and an aimpoint.
7.62x54R Bolt Action Rifle, old but proven. I like to use this without any scope. Allow many different animals up to moose. You only got a 3.5X scope to choose from. But there's something about this rifle that makes me like it.
This is not a rifle but its the weapon I've used the most over the years.
12 gauge pump shotgun, With all three ammo types you're permitted to hunt everything but bison. You won't take long shots with it (compared to rifles). You can get off shots in quick succession and slugs will tear through anything.
But at the end of the line, all the weapons get the job done. It's more about which gun you'd prefer to use than in game mechanics and ballistics, meaning I can pick any rifle I'm personally good with and take down a moose (if permitted) with a single shot. So go through the weapons and see what animals are permitted and which scope(s) you can pick from and go from there. How small and how big animals do you want to hunt (besides deer), what scope(s) do you want to use if any.
Not as popular with the purists because many think that asthetically it is an ugly rifle.
But for consistant results over the widest range of animals it is right up there.
Permitted for all animals from roe deer to buffalo.
possibly a fraction less powerfull than the 300 at extreme range but well placed shots will return same result, IE dead.
Long range shooting is easier with the 12 power scope, an option you dont have with the 300.
Faster reload than the 300 and wider range of scopes available.
Only the lever actions and the 223 semi are faster.
I have both the bullpup and the singe shot in 7mm and find even with the single shot a second shot is seldom needed.
It can take down everything except for small game.
My personal favourite is the .303 for asthetics (which btw absolutely nails Red Deer in their tracks); and if I hunt Bison/Polar Bear I just bring out the Weatherby Magnum - absolute beast of a gun.
Its not got the range but is permitted for every single animal in the game. A rabbit or a Bison, the bow can take i down. Only thing you need to learn a little is the shot placement (heart, lungs...).
