I suppose it's the same when playing over the network. I suppose it's not like a regular persistent MMORPG like WoW where you log in and hunt, then relog the next day and continue where you left, but a new instanced mission is spawned for you and your mates (or you join one in progress), and when everyone else exits this mission is destroyed and you have to start another?
However some missions can be done over multiple sessions. Usually a mission that requires you to finish the whole thing will include something like kill a whitetail then kill another in the same hunt. If it doesn't say "in the same hunt" then generally the progress will save if you exit the game.
