I want to play times end then go back to the polar bear people and nyakuza metro, will my file end?

No, you can replay any chapter and even the final boss as often as you like. So getting 110% completion (+10% for the death wishes extra challenges) is always possible.

Though doing the final boss will lead to the credits and end screen. But as soon as you reload your save you can continue and the boss chapter will be counted as done.
