i Got all the time pieces in the metro, then the boss left and said enjoy your earnings, i quit back to the hub and played the finale, i feel like i am heavily missing something, i have a feeling was meant to go into the back of the store and steal a time piece or something but i cant go there now as the door is closed?

The same thing happened to me. If you want to see it in game, you can go to free roam and then go into the back room of the jewelry store from there.
