The knives and discoballs are really just sheer concentration and being prepared to dodge them.
Timestop hat helps though.
The knife hitboxes are wonky, especially vertically, so you never want to try jumping over them. Instead, they're very slow, so if you just walk horizontally, you'll outrun them. What I do is start in the corner, and just walk to the other side. When I get close to the edge of the room (use the center... circle... thing... as a guideline), I double jump quickly to turn around and dash to gain some extra distance from the knives that are now coming below me. When I hear the vocal cue (like The Conductor saying, "Slice of life!"), then I quickly double jump to turn around and do the homing attack. Adding disco balls into the mix, you just have to jump in time as you walk from side to side and air dash as needed if there are shock waves beneath you.
There's a lot going on in this fight, so if you have any other specifics, then I'll try to help. I definitely don't recommend trying the bonuses for now.
As for audio cues, my problem is that, of course, I only really ever memorized the Conductor's voice lines, because A. He was the first one I fought (I fought both in separate files) and B. He's WAY more memorable than Grooves. My lack of knowledge for Groove's voice lines paired with all the other noises made by knives, disco balls, and Big Bird makes it hard to hear, and thus memorize, the voice lines.
Yeah, I get that. I fought The Conductor first as well. DJ Grooves's lines are also kind of quiet for some reason, and he doesn't have as many unique lines. What I did when I was learning the fight was go into the volume settings and turn down the music. I forget if the voice stabs are part of the sound effect or the dialogue volume, but you can try playing around with the settings to find something that's easier to hear.
It's less about memorizing which sound pairs with what attack and just being able to react immediately when you hear them say stuff. Most of the relevant clips are just plain voice grunts (like "Hwah!" and "Hah!" and whatnot) when he does knives or the corner dives, and he shares plenty of lines with The Conductor (like with disco balls, they both say things like, "Ladies and gentlemen!" or "Here we... go!").
The dumb fact of the matter is this fight yeah, is pretty darn RNG. You have to pray that during the car phase they do not "desync" so to speak and have one summon cars while the other does something else. If that happens, I've found jumping into a corner and basically spamming the jump while slightly moving has helped me take minimal damage there.
Focus less on voice lines and more on visual tells imo..
They always jump to the stage and show you their knife for a second before falling down. Similarly, the knives always come in pre-determined sets. when its just the one boss they'll throw out 6 knives at you really fast and its always the final knife. When its 1 boss + 2 clones they always throw 3 sets of 2 knives, with the 3rd set being the boss. When its 1 boss + 4 clones its 5 sets of 2 knives, with the boss being the 5th. Use these to your advantage to know when to counterattack. I like using Time Stop just as the final set comes so i can more easily (and safely) punish the boss for this.
The Disco Balls.. They always zoom up into the air and you have about 2-3 seconds to see them sitting up there. Phase 1 and 5 they drop down immediately. Phase 2 they try to fake fall for a second, and Phase 3+4 have 3+5 clones respectively that crash down one at a time (I think its chaotic fun when both bosses use the Disco at the same time)
Cars and Lights they will whistle for. Cars are a phase 3 exclusive move so that's the only time you'll have to worry about them. Similarly, they always will try to "belly flop" you after they've brought lights down upon you, doing it 2-3 times before leaving themselves open to an attack.
When on Phase 4 with the sawblades, Time Stop and double jump (+dash if nneeded) + homing attack will almost always guarante your safety andn punishing them. Just dont bee too close to them when they first initiate their attack as they can scream, pushing you back and cancellign your time stop. As well, when they're up in the corners throwing saws at you, they'll always throw 2 sets before crashing down a half second later. So once you see the 2nnd set land onn the ground, immediately jump and homingn attack as they'll landn right undner yoou
I got to phase 5 first try this morning, though the freakishly long Owl Band combined with the sudden return to phase one attacks stunned me to much to last. Time Stop hat has been very useful, though I'm not sure how often to use it: Whenever it's available, only when I'm overwhelmed, specific attack? I've been using it the way I listed second.
Remember to equip the Fast Hatter badge as that reduces its cooldown significantly from my plays... though I do recall there being an issue where it wasn't affecting anything in certain Death Wishes

Well, the main objective's done, if anyone's got advice on bonuses, feel free to chip in.
for 100 seconds, you need to know all of their attacks and when you can punish them, and punish them asap (time stop also slows down the timer, making it all the more nice to use.
for only hitting one director, Time Stop is immensely helpful here and I'd advice using it almost every time you make an attack so that you do not accidentally hit the other director. Choose either one, it does not matter which, and stick with them until they finally die in Phase 5 where you can then safely attack the other. Ultimately it comes down to just knowing the fight well enough that you can dodge all of their monstrous attacks for 5-6 minutes (as this bonus doubles the length of the fight).... Phase 3 is the only real troublemaker here as the longer that phase goes on, then the easier it is for them to de-sync and have one do somthing while the other uses cars.

If you're having issues with Disco+Knife combo, I just forget about even trying to punish the Disco and work on dodging and punnishing the knives. I stay far back and doublejump+dash as often as I can while moving left or right to avoid the shockwaves and knives simultaneously, with Time Stop as a panic measure
For Bonus 2, I think everyone targets The Conductor since he always attacks first. For the final phase, though, DJ Grooves is almost always the first one to do the Corner Dive. At this point, I just stall until he moves onto his next attack. It's really easy to homing attack him on accident, and you don't want to mess things up at this point. You might be able to sneak in a Time Stop to help, but I just prefer waiting.
Phase 3 and 4 are the worst for this bonus. Because Phase 3 is now extended, you'll likely run into the worst RNG combo, which is Cars + Knives. If you panic and try to jump to the corner like you usually do to avoid cars, you'll just get knifed. I just did some testing, and Ice Hat works all right, but you're right that the Fast Hatter badge isn't working correctly, so it might not be reliable.
I did a ton of practicing trying to dodge it without hats, and it's possible, but difficult. So if you're in this situation, and your hats are on cool-down, start in the center where you normally are when Cars starts, but go as right as possible without hitting them. Then it's a matter of very precise timing. As a rough outline, it's a modified version of going from side to side to avoid knives. You double jump up and dash left as both knives and the first set of cars pass under you. You land in the center as the cars pause for the second set. Then you do the same as the second set of cars and remaining knives pass under. You might have to double back and jump right because there's no room to the left. The timing varies slightly because the attack times also vary. If you do have Time Stop available, you can try this maneuver with it activated.
Edit : Oh, also, there's a glitch where the Directors can actually damage each other. Unless something has changed in the recent update, if The Conductor hits DJ Grooves, it won't count against Bonus 2, so don't panic if it happens. It's actually very helpful because it speeds up Phase 3. I'm not sure what happens if The Conductor kills DJ Grooves first though. They can definitely kill each other, but I'm not sure if it will confuse the Bonus or not. I might do some testing... :P
Jump to bottom left corner (away from non-car attack)
As the not car attack starts having any chance of stunning or hitting you, use Time Stop hat and jump-jump-dive right. By the time you hit the ground, the cars should be gone and you can focus on avoiding the remaining attack.
