As someone who's favourite 3D Mario game is Sunshine, even I recognise it has several design flaws such as the progression system where you have to beat episode 7 of each level to finish the game with none of the optional collectables contributing to anything other than a postcard. I did find collecting all the blue coins really enjoyable, however, and the only reason I actually went out of my way to do so was because it was fun to do.
At least with A Hat in Time, progression is tied to how many collectables you have and not just specific collectables so you can skip any time rift levels or tricky hourglasses you don't want to do.

About Odyssey - that game had way too many power moons; they're required for progression and the ones you're required to collect along the way are treated as more important than every other one despite being just as valuable. Most of them feel like getting a blue coin in Sunshine, except those aren't treated as valuable as the shines which are the defined end goals of a level.
You summed it up well.
I hated Odyssey for that very reason. It's like "Walk 3 steps, you get a moon. Break that brick nearby, you get a moon. Kick that koopa shell, you get a moon. Oh! Time to go on to the next area!"
So, there's no challenge. You do a few small tasks, and suddenly it's time to go on to the next area.
Almost like "walk from point A to point B, move on to the next world".
64 and Sunshine, you actually had to work for it.
And even if you try and cheese Sunshine by collecting blue coins, it wouldn't work, because the endgame only unlocks once you've beaten the 7th episode of each world. So you'd have to work for it (or you'd have to, as the kids say: "Git gud").

Meanwhile, A Hat in Time was charming all the way through.
And was tough in places, especially the contract stages (which fits since it's mostly post-game), but still fun and do-able.
Yeah.
What about Hotel Mario? Mario is Missing? Paper Mario Sticker Star?
(Also, you didn't like Sunshine? Huh, that was actually in my top 5 favorite Mario games. Meanwhile, New Super Mario Bros 1/2/Wii/U/Switch... ugh, it's so cookie-cutter and boring.)
What do you mean "even Sunshine"? Are we still not over this ♥♥♥♥♥♥♥♥ on Sunshine thing? Aside from like 3 minor issues I would call it a perfect game, just like the other 3d Mario games.
(I also disagree with the ♥♥♥♥♥ you replied to though, A Hat in Time is amazing too)
Galaxy 1 and 2, 3d land and world are bad but sunshine is one of the best games ever made tbh
