No, any boost used at that point is wasted. Supersonic is as fast as you can go.

Why is it that I'm not surprised to hear that this game has a max speed, yet I am surprised...? I know I waste boost in this regard. Now I need someone to test this with me...

You can go over supersonic. With boost or in the airs, where you are the faster. Supersonic is the state, but you can be faster than the limit if I can say. You can notice it when you reach the supersonic and an opponent achieve to rekt you right in the huh. There, that means you re not fast enough into your moves.
