5 is the top tier in each division.
However you will probably go from 5 in the lower rank to 2 in the higher.
You tend to move two divisions when promoted and move one when demoted.

I always get *next rank* div I
And deranking either *lower rank* div 4 or div 5

It depends. Divisions V and I are "overlapping"

Depends what opponents you play. Higher ranks give more points for wins, less for losses and vise versa. It's not uncommon to drop to division 4 or to skip to division 2. It purely depends on your performance and who you played against.
That's not true. No match, no matter your opponents, will rank you up or down 2 divisions at a time. V and I are overlapping and most times you stay in one until you pass to II or IV

It is true. An example would be in doubles, team A being a Challenger Elite and a Rising Star, whilst Team B being a Challenger Elite and Super Champion. You might think that's unlikely, but it really isn't. Plenty of people boost up to the Champion ranks, and as such, if you win against them, the points accumulated against the higher ranking player can often jump you up more than one division. Although, I don't think it's possible to jump more than 2. At least I've not seen it.
I'm pretty sure that doesn't happen (under normal circumstances).

I mean there are bugs and weird stuff sometimes but if a prospect wins against a champion, I don't think he can rank up more than 1 division.
