Look at this game as if it was a roguelike,
It's very unlikely to make 100% on your first playthrough.
You play, evolve your character and the progress carries over to the next playthrough.
And next time everything became "more possible".
I've had the same problem when started playing Dead Rising.
But after understanding that, the game became addictive.
Dead Rising is about exploration, until you know the place and start making your own real time strategies.

And I hope you don't give up, it's a great franchise.
Take each run at your own pace and save manually often even though there is autosave. If you feel stuck then restarting with your current level is always an option. If you run out of time for main missions you can still do side missions and get a valid ending by being at the helipad on time.
The more you play the game the less you worry about time or if survivors will die.
