As for dealing with bandits: have a buddy along who has charming. Makes bandit encounters practically a non-issue more times than not.....And don't feel bad when it doesn't. This game is very "randumb" sometimes and it's quite often that runs will end, not because of anything you really did, but because the game itself is just really luck based, especially completing it. You can have the "Best" possible loadout and still end up getting destroyed at the end because the number of zombies, movespeed, ect are all random. You might have to survive twice as long sometimes because the mountie-bot won't spawn, resulting in death when ammo is already rough enough to stockpile.
The Pyro class just feels like a tacked on idea, not very useful in terms of party makeup. I'd wager it's one of the weaker starting classes.
I've charmed bandits down to taking 2-6 food instead of, yaknow, everything and the car.
