There's extra Ai plugins, custom monuments and mini-games, quests, servers where you can build things you otherwise cannot, strong bosses, heavy military convoys, PvE raidable bases as well as "raid me" function that spawns waves of invaders trying to destroy your base...
There super easy pve servers but there are even hardcore PvE servers that are stupendously punishing
Countless things, Rust is more of less a sandbox for server owners to mess around with. There is a lot, there's at least a couple of PvE servers that I visit and play on frequently.

You cannot take anyone's stuff there.
Rust is not meant to be a single player game, I've setup my own server to test stuff but I never play on it cause it's not really fun without other people.
On PvE servers there are plugins that give you more quests and cool stuff to do. i guess you could install all the plugins you want on your own server, but that is a lot of hassle
yes and it is great fun and played it for years so can answer without guessing :)
there are many good pve servers and I am happy to recommend a few
it really depends on what you want as they are generally modded
do you want high rates with lots of npc's and callable heli's or a more chill experience with better quality of life mods...
the decision is really yours!
I'd happily play on your server if you ever want to and find more people! I prefer low pop to high pop personally
My friend has a low pop PvE server, Hydro2X. It's somewhat new but she has a team of good admins and they are adding stuff all the time .
But unless it's a wipe day most PvE servers generally have lower pop. Even 30-50 people on a large map is nothing, you are unlikely to see them. On 10-20 pop you have to go out of your way to track people in order to meet them.
I would recommend RustEZ Scourge servers for PvE fun as well, they have zombies and some custom monuments and a pretty friendly community. They always have 4 oil rigs on the map which makes it not that much of a contest to get to one.
NorthNet has good PvE servers, 3X is the base rate so you progress quickly and get things too fast imo, but they have fun maps and bunch of interesting plugins that makes certain events a challenge even with the best gear.
TrolliWorld PvE is a Hardcore PvE server, map is a "fog of war" type where you have to explore places in order to see the map, it's quite punishing and Ai barely misses any shots. There's no tech tree so everything you find is very important - the only way to research thing is a research table. You can't mark your own base, so you have to be able to orientate your self properly.
RustPVE.FUN is one I play from time to time, has cool plugins and for some reason no one there goes for hackable crates - so I can always get a quick start. Kinda the opposite of Trolli server where everything is a pain but well worth it.
This server has a unique Nature Shop plugin where you can buy trees and bushes and put them around your base to make a cool garden.
All servers above have means to protect your stuff from other players, you cannot be looted by others, players cannot damage your stuff. Most PvE servers have that, all PvE servers have means and rules against people why try to exploit certain holes in that.
