There is no button that does that. The only way to remove a keybind is to open the .cfg file in your Rust folder and remove it and save it there, or to do:
bind [key] "" - which makes it null or empty.
Ive never had this happen and I have every single key on my keyboard binded and I change them constantly between server owner layout and content creation/demo file recording hotkeys.
Try editing your cfg file and saving it to add keybinds. You shouldnt have to do this, but this is a workaround that might work.
Right click Rust in your Library and goto Properties, then goto Installed Files, then Browse, then the Rust folder.
Look for a folder called cfg. Open that, and the one you want is 'keys'
'keys_default' is your default one so if you mess something up, you can copy and paste that in 'keys' and restart, but its pretty simple.
If you read this page, it will teach you how to do advanced stuff like toggle between different binds with one key, like having FOV 70, 80, 90 with 3 different settings using only one button, or things like that.

Some shortcuts (keys) cannot be changed. They get the default when changed.
Are all keyboard shortcuts reset to default? or just a few.
