Add shop fronts so others can see this stone base is not worth raiding for a single horse.
Buy pickles from bandit camp and feed the horses with them for stamina and health regen. Don't waste your own food. Add a composter and make fertilizer from horse crap and sell it at bandit camp for a scrap profit.
The thing with videos like this is that this spot becomes pretty much useless as soon as this video gets more popular.
I used to add windows to my stables, in an attempt to show people there's nothing worth breaking in for. Unfortunately people shoot my horses when I do that. I used to think my horses were just despawning until I came back from exploring to find my horse dead, looking like a pincushion full of arrows.

If your horse dies with either of those still intact then you forgot to place food for him. If roofed, a horse will gradually lose health which is why I mentioned buying pickles. You can buy heaps of them for so little scrap which you will regain in no time by selling fertilizer from that horse.
