The max frequency that your motherboard can support is not the same as the rated frequency of your RAM modules. Are you certain that your RAM can support higher speeds than that?
If after enabling XMP it still defaults to 2666MHz, lower the MHz values. If it fails to boot with your desired speeds it will reset to 2666MHz and means that it was unstable so you have to go lower.
Looking at you motherboard specs your cpu Ryzen 5 3600 (Matisse) supports up to 3200. There could be a setting your missing that keeps reverting back to 2666. When you setting up the memory speed are you using a XMP profile.
