Like in LoG1 there are three difficulties: easy, normal and hard. From my experience as beta tester i can say this:
LoG2 Easy is similar to LoG1 Normal
LoG2 Normal is similar to LoG1 Hard
LoG2 Hard is .. Ouch!

The more you min/max your characters builds the easier the game becomes.
Pretty much this.
If you start easy game with 4 farmers, all focusing on dex weapons, you will not have a good time. No matter the difficulty.
Make a balanced party, and if you are not completely horrible at secret finding and/or square dancing combat which are a part of RT Dungeon Crawlers you will have a pretty easy time with the game, except for the bosses, they made them quite hard, which is a good thing.
There are usually several good strats for each boss (which you can figure out). Just make sure you get a fresh save (I played on Normal Ironman mode first time) before you test them for the first time. When you are about to face a boss is usually quite obvious (from notes, location and whatnot).
I 1 or 2 shotted most bosses except for The Master (took me 4 tries).
A few tips:
Play on easy if: You don't like: Looking around for everything, min/maxing chars, reloading if a fight went slightly worse then it had to too conserve consumables.
Play on normal if: You don't mind finding at least 50% of the secrets. But if you are going for the true ending, you will need to still be conservative with consumables and find a lot of the good stuff.
Play on hard if: You really enjoy the combat (I'm not a huge fan of this myself, the exploring and puzzles are what gets me into these games).
Tips for balanced party:
Only focus on 1 weapon type per character & party (light weapons have both dex and str based weapons, so 2 could focus on light weapons one for dex and one for str).
Get at least one alchemist AND level 5 alchemy in your party (I regret not having either by the time I had to face The Master).
Only have 1-2 heavy armor focusing guys (I recommend one), 1-2 light armor and 0-1 without armor skill (based on the best gears you find in the game).
Only 2 stats matter on your characters. Their main stat (str, dex or wis) and vitality.
