Worth holding on to unused items?
I have been stockpiling old items I don't use, since many games have shops or places to trade in them. I get the feeling this is not the case here, so should I start getting rid of things I don't need?

There's no shops, but you may find that you want or need things you let go of. There are even a few situations where something you dropped is necessary to progress in the game. My solution is to leave things in empty treasure chests in relatively centralized places like Sleet Island (or someplace you can get to from the Hub; just not in the bowels of some cave) then mark it on the map. I tend to carry a ton of unnecessary junk because my minotaur has a capacity of 140kg and is immune to burdened conditions... but most of it just sits there untouched.

You could turn the Hub into a storage room like I did.

Not really. There's nowhere to sell items so you mainly want to keep a supply of food, potions and potion ingredients, rope, shovel, lockpicks and pestel&mortar along with weapons and armour for each character, generally the best available for them, which, with a relatively balanced party is 1-2 light weapons, a heavy weapon and either some reach or ranged weapons along with possibly a wand or orb. The only other things that might be kept around are stat boosting books/potions (if you're deciding who to use them on), notes and maps that haven't been discovered/cleared, quest items and keys (most likely golds, since the others are generally used near where they're found).

I keep most of my old stuff in boxes and sacks in the hub area. Starting to throw away some lower level stuff now though. Not unique things but just the weak and light armor that you usually find more of. Also started to throw away notes that i have already used in puzzles and secrets. They just took too much space i could use for other useless crap i probably don't need. :)

I also don't really tend to use any potions at all, but just in case i always have 8 health potions and some other ones with me. The rest is also stored in a sack in the hub. Same for potion ingredients. I keep like 10 of each and store the rest at the hub.

I also used to keep scrolls with me in the first game, but in this one you can also see the learned spells in the traits tab, so i dump the learned spell scrolls in the hub too. Probably can throw those away too.

The things i throw away are just outside the hub though, just in case. :)

Potion ingredients weigh something like 0.05kg so there's no reason to be shy about carrying them, especially if you have an alchemist. They weigh much less than potions!

Yea, each one may seem light, but if you have a hundred of them its already 5kg. :)
Could carry more useful stuff (that i probably don't need either) with that extra 5kg. Besides, i don't even really make potions so i don't need to carry all those ingredients. Just a few just in case i absolutely need it.
I already find enough potions that i don't use.

Should probably have just customized my party and switched the default alchemist with another mage or something.

I'm surprised more people don't use potions. Most times I like to have 2 health potions and 2 energy potions for everyone at any given time, and it never hurts to polymorph, rage, etc. I'm not sweating 5kg when the total carrying weight of my party is nearly 400kg. Gotta have a strong minotaur or two!
