A list / guide of Easter Eggs / Jokes?
Is there such a list somewhere? I tried googling but didn't frankly find much. At some point I wondered if I should write a Steam mini-guide explaining some of the jokes and references but the thing is I'm entirely certain there are some that I haven't picked up on or understood. And there are a LOT of them in the game.

You might find https://stalburg.net interesting. I'm not sure of the jokes you are referring to. A joke might be entirely internal to the game. But it might instead be a feature of the game which refers to our world.

That sounds like a really difficult task. The lines between an actual Easter Egg and the general plot-related content of Infra as a game are blurry for the most part. I just mean, it would be hard to define what in this game qualifies as an Easter Egg to begin with.
The poster of the Engineer movie back at the printing room in the office in chapter 1? Certainly an Easter Egg.
Activating 'green mode' under the platform of the sawmill crane? Yea, that's an Easter Egg.
Boots sticking out from the remains of a grid classifier? Not sure. It's a photographable spot, so it is relevant to the progress you make - on the other hand it's unexpected enough to maybe qualify as an Easter Egg.
Same with the two small aerial bombs you can find in the game. They're both not part of the general theme of Infra enough to not qualify as an Easter Egg, yet they're photographable spots so maybe they are not Easter Eggs after all.
What about a "You can stop corruption" poster at a wall? Pretty sure it's plot-related content, then again someone else could have a different opinion.

My whole point being: If you really want to do that (and I personally could imagine that your idea has the potential to be hillariously good), you should make up your own list and only count what you would qualify as a good Easter Egg to show in your guide.
Of course then there still is the challenge of you having to have knowledge of all the (potential) Easter Eggs. I promiss you noone here does and I'm pretty sure there is no complete list anywhere. Peskys advise is probably your best shot, talking to many fans of Infra and ask them about what they think would be hard to miss remarkable Easter Eggs.

This is why it seems like such an extensive but perhaps fun task. It's also why I should rather call the guide "Fun Stuff" in INFRA rather than jokes & easter eggs. The game is full of them and I always find them pretty fun to see - more so as a Finn because some jokes reference Finnish things. The line blurs easily on what is what; for example I'm not sure if smoking the bong the teddy bear is holding under the Sawmill some kind of an easter egg, a reference or just a simple in game joke. Either way it'd be awesome to have such a guide, for people who love the game and who may have missed a couple of those said jokes. But there's so, so many things like that in the game and I definitely haven't noticed them all, or know what they refer to. Could be some kind of a project idea for INFRA fans as a whole, not just me? I'll have to see, but the idea seems kind of fun to me, even if I'd (we'd?) have our work cut out for us.

You shouldn't miss the conversation of Carla and Amit about Mark in the last chapter right before you free them up.
The coffee machine Rob fixes for you - ever tried using it twice?
Also, the very last moment of the actual game when you watch the TV and after the News Show it tells you what's next in program. "Cooking with Ramsay Bolton" is last on that list.
Also, if you forget your credit card somewhere in the game, someone will send it back to you with a letter.

There are other really good funny moments in Infra that are a bit complexe and probably not as easy to transport in a guide or video.
Like when you're inside the Bergman Tunnels for the first time and can't open many of the flood doors because the valves are missing and then you leave the area (after the collapse of the flood gates) and right after the loading zone there is a ton of those valves on the ground. Made me smile. (It was probably Robin, right?)
Just like with many of the documents you find, many contain artfully crafted jokes when you set them in context with other documents or circumstances or the general content.

I'm on my 6th or 7th playthrough at the moment, still discovering something new everytime I play it through.
The sugar-free Huribo Evil Bears definetly belong in that guide. They even made my wife smile when she saw me playing.
You should also check for the achievements, because some of them relate to funny content.
Here are some things about your post.

Rob only makes a coffee machine for you under some circumstances.
Depending on what you did in the game, you get different things on the TV at the end. Sometimes there's not even a crew and you just get a text notice on the screen.
You always get your credit card mailed back to you, even if you never use it in the game. (This may be a bug.)
Those are just the ones I know. I'm sure other people have made different choices in playthrough and got different results.

So even if you say your entire work contains spoilers, you'll be talking about things that some players won't have seen, even if they've finished the game.
You're probably right. I haven't done enough testing - not even close. Still wanted to give some input because I liked VI-nsanitys general idea a lot.
I literally just today figured out that ringing a certain doorbell at Turnip Hill Open Sewer (Virtanen, I think) like maybe 20-25 times leads to an explosion. There are tons of things I don't know.

Pretty sure you're wrong about the credit card since I'm 100% sure it wasn't there at the end in my last 2 playthroughs when I did not forget it. Maybe it got fixed?
Also, telling people about Carla and Amit having a chat in the last chapter is a minor spoiler.
Generally you're right about that probably the majority of potential Easter Eggs require you to play the game in a certain way.

Deffo heard that convo and used the machine :D Also loved the Cooking with Ramsay Bolton. Got my Credit Card sent back to me too; though at what point do you loose it, or is it just a general thing? Mark DOES wade, crawl and jump about so it's possible he just lost his wallet at some point. I LOVED that pile of valves though! First time I saw it I just concluded that the game had just very successfully trolled me. Well, when in doubt, blame Robin as you said.

I generally find the little products in Stalburg making fun of their real life counterparts pretty funny, like Fanta being called Fail or the Small which refers to the BIC stationery. Also Nykiö and Jaffe (Jaffe comes from Jaffa which is basically a Finnish version of Fanta, and they've pumped out so many damn flavors including salmiak so an oil flavored one frankly isn't that far from reality at this point, yum yum!) Then there's the little Ball Grills, just to name a few things. The explosion is a new thing for me, didn't know about that. Gotta try!

There're at least three bombs: one in a forest, one in a power station AND one underneath the control room near the entrance to the SNW bunker (the very end of infra_c7_m1_servicetunnel map). It's behind the teddy bear in a military safety helmet. There're also some other explosives.

You can find a office door at chapter 1 that says ??? work there. Just down from floor 3 to 1/0 by the emergency stairs then when your out from the stairs (do not go outside its inside) turn right until you find a locked glass door and then zoom in on the name sign. I was shocked when i found it, is it only me? or have it been discovred before? [ I also found (my summer car) refferences at the office]
