Some insight on it. Basically, LUA is a slower language than C++(which Isaac is programmed in) , additionally right now modders have to do ineffecient callbacks (scanning the whole screen for entities) which results in this lag.
Until better callbacks are implented, you won't get a fix apart from just playing with few mods, which is not a good solution.
Personally I stopped playing with mods for now because the current situation creates lag that I can't stand.
