For regular 3v1 gem fights, only one opponent has infinite lives. I recommend focusing on killing the other two (one of them has 1 life, the other has 2) so the fight becomes a 1v1. Of course, if you can get some gems while doing so, do it, but don't focus on it too much, as you will get gems back from killing those two enemies anyway.
For Order of No Quarter gem fights, the strategy is similar, except you can actually win by killing all enemies. Focus on murder, grab some gems when you kill, and it should work out. Still hard, but definitely possible.
Showdown doesn't really feel finished in my opinion, maybe there's hope that there will be balance patches?
The Order of No Quarter stages are always shown by Specter Knight being the last one before the boss, so when playing on a higher difficulty, if Specter Knight is the last one before the boss, restart. It's still possible to get BS'd, but it's significantly rarer.
I won't do anyone on medium or hard, should a single fight be close to that one. I only won thanks to sheer luck AND bad enemy composition.
They clearly did not test Showdown out at all, and, imho: should you get any mediocre stage with an bad AI teammate... reset time
The bare minimum that they should do is ensure this fight cannot happen on a small map with barely any cover (and no instant death pits for quick kills), like grassy clearing or the campsite. Even worse the gems on that map spawn in bubbles, so you cant even make a quick run for them.
What they should do to fix this is a) hand pick maps where the fight doesn't result in the AI stomping your face in (hint: bigger maps), b) increase the number of gems required to win so you have time to try and beat the enemies down (and hopefully steal a gem or two in the process) or c) remove gems altogether and make it into a showdown with fewer lives. Trying to beat 8 opponents all teamed up against you with 3 lives sounds challenging enough to me. Or come to think of it, d) if you lose the fight twice in a row, change the map into another one instead of forcing the player to waste all their continues on this mess.
