Just because Georgie said he killed her, doesn't mean he killed her. For example, 'Nerissa' described how he killed 'Faith' in the last scene, and that doesn't go along with the evidence(don't want to retype walls of text, but it's most likely that one girl was killed in Lawrence's appartement with the blooded dagger). So if he was wrong about one girl, he could have been wrong about both. Also he would be a complete moron to kill someone in the place where all the girls work, so it's entirely possible it was someone else. They have the club, they have the foundry, they have the teleporting castle - Georgie could have done it anywhere. The reason to leave a mess is to let Bigby see it, same logic as with putting the head at his front door.
K, that's a bit offtopic, I just don't want Georgie to get all the blame when there is not so much unclear points about him compared to others.
Large amount of blood - probably just because she was a troll. Glamour works like a skin only, if I remeber comics right, the insides (like blood amount) are still there. Another thing is that she was dragged all the way to the door, while Vivian remained in place.
You might also be asking why the blood trails end at the door suddenly and why Beauty didn't see anyone carrying anything - consider the magic teleport door of Crooked man castle and you have the answer.

I think there should have been blood in there but they maybe thought it was too gore to show? Seeing a pool of blood is one thing but...
As a 3D animator myself I can tell it's very easy to make bleeding look fake, so maybe they just thought it was more aesthetic that way. Either way, I don't think it concerns the plot but is a technical thing instead.
