I registered my DLC on the Bioware web site, downloaded and installed the files, and upon starting the game again, re-entered my account information. The only thing is, at what point do I see the DLC in game as options, or is it automatically applied?
Ah yes, it is automatically applied, you should see them pop up when you enter the game, as in the notifications you usually receive. Once you login to the account on ME2, it should be all there, there is no way of knowing until you enter the game (Actually start playing). But its all applied once downloaded.
TL:DR If you downloaded and installed the exe's you should be golden.

Weapons can be accessed in the Armory (Jacob's room) or on any loadout screen before a mission.
Armor is accessed in Shepard's cabin.
Zaeed will be found on Omega and the other missions you'll find on the galaxy map.
Kasumi if anyone has that DLC is found by walking up to and interacting with the advertising display you see when you first enter the citadel
Arrival and Lair of the Shadow Broker for those that own them doesn't become available to play until you unlock Illium - while you can play them at any point after that, they are really meant for after the main game is completed but dialog will adjust accordingly depending when you play them.
LOTSB can fit in well enough during the main game. At least, I fit it in pretty good (do Liara's sidemissions, have no other story in progress).
