if you haven't got it, the only one wa is check every single planet - scanning (not using probes). if there is a huge amount of ore, launche probe, if average (or less) go scanning to another
More star maps appear as you continue through the game, buy maps in Illium, and like stok said, there can be assistance in the Shadow Broker DLC if you complete it before the ending instead of after it.
It can be useful to check out every planet anyway, since you may unlock sidemissions on them.
