Any reason to keep probing planets?
When I don't need the resources? Could I find random anomolies on planets even when I have no quest for it? Or is there literally no reason to visit random planets when I don't have a quest or need resources?

There are possible anomalies you can find and a few mini quests with that, but you get told if a planet has an anomaly if you just scan it.
So no need to probe it if you have enough ressources and the planet has no anomaly.

Yeah, if you have all the ship upgrades there's no reason to mine any more, but unless you're in a hurry you should go and scan all the remaining planets until you get 100% on every system because you might catch a few hidden side missions.

If you bring a certain amount of resources into mass effect 3, you get more assets than you otherise would, up to 100.

War Assets are important because, reasons. And colors.
