Both names are meant as a joke and only give an indication of their difficulty as related to one another.
As the game is still being balanced, it is hard to say if DotE's Easy difficulty would equate to a Normal or Hard difficulty. It has gone through itterations that would have fit either description.
As it is, Too Easy is a god difficulty to learn the game and unlock things without having to worry too much. Easy is the difficulty that can see you fail due to bad luck or wrong tactics, but that also gives a real sens of accomplishment in the end when beating it.
People have been requesting a third difficulty setting - no idea what that would be called.

"Too Easy", "Easy" and "Slightly Less Easy" would be my pick.
"Easy enough for you?"
But after the last few patches, "Easy" feels like HARD. With all-caps. "Too Easy" is now indeed fairly easy, the only resource that will be scarse is Dust. And it still boils down to luck in the last few levels sadly.
I'd like to see a middle path in the current difficulty options as well. But mainly for the amount of monsters that spawn on the last few floors te be rebalanced. On "Easy" 6 unpowered rooms = death. No matter if you have fully decked out characters, there is only so much you can handle, the game currently just always kills you if you have 4 rooms that spawn waves in that you cannot cover.
I would recommend playing Too Easy until it actually becomes too easy. Moving up to Easy is quite a difficulty spike.
In a situation like this I suggest kiting. While hero with crystal is going straight to the exit, 2nd hero can kite mobs away from the crystal keeper. After you will see that crystal keeper is close enough to the exit, run back with your 2nd hero to the exit. In such situtation, if you will stay & fight, mobs will get you in a couple seconds. The only way is to run.
Just comes to show how unforgiving this game is. ;-;
I was doing pretty nice for easy mode though.
