How to actually build walls?

Title. I put wood walls up but stuff just goes past them?

Build once for the background wall and then build on top of it a second time for a foreground wall.

Bonus tip: use the same material as the foreground wall (be it wood, stone, or whatever) and keep clicking it after the foreground is built and it will let you rotate different appearances/shapes for the wall to customize it.

Does it matter what a background wall is if it has a foreground wall infront of it, or is the background wall made irrelevant when a foreground wall is placed in front / on it?

Aesthetically pretty much. If you put say wood in the back and then stone in front you will not see the wood on back unless you "rotate" between the front wall types. You have big brick, top wall, left wall, top left corner, right wall, top right corner. On those you WILL see the background tile.
